New Swede Day 2022

A year ago, today, we received letters, granting us Swedish residency. Mirinda said we had to celebrate it properly. If we hadn’t had cardamom buns on Monday, I’d have made a batch today but there is such a thing as too much of a good thing. So I made traditional Swedish meatballs instead.

The recipe I use is from a Swedish woman who lives in the US. It was passed down to her from her mother and her mother before her. Because she’s living in the US, she includes a creamy gravy as well but, of course, we have them on mash, with lingonberry jam liberally spread over them.

Obviously, being lo-carb, we have cauli mash (with plenty of grated Parmesan mixed through) rather than potato and, because we’re trying to be a bit seasonal, I have been buying asparagus (with lashings of butter, of course). But it’s pretty close. And the meatballs taste brilliant.

Of course, I have to make my own grillkrydda spice mix because it’s not that easy buying it here ready prepared (note to self: bring home some grillkrydda when I go to Sweden in July) but, given I know what’s in it, maybe that’s better.

In the afternoon, prior to my Reading Hour, I raised a glass of Absolut Vanilla and toasted us – Mirinda was out, walking the girls.

I really miss Sweden.

Dinner was delicious and a lot better than my photography makes out.
