I have a confession to make: Up until today, I had never made waffles before. This has clearly weighed heavily on my mind as I navigate through my kitchen life. Then, like some sort of all-knowing god of essential cooking, Geraldine sent through a recipe for savoury zucchini waffles. I knew this was a sign. I had to make some waffles for lunch.
I wanted it to be a surprise so I didn’t tell Mirinda what I was making but I had to buy a waffle maker first which required her to drive me up to Elon. I had already checked online to make sure they had the one I wanted. (They did have one, literally. They now have none.)
I told Mirinda, mysteriously, that I needed something to make lunch but it was going to be a surprise. This had her jumping into the car almost straight away. This was also because it was getting on and she had a Swedish class at midday.
I marched into Elon and told the guy what I required. He showed me the various options and I pointed to the one I wanted. He said it was the only one they had. I told him that I knew and I wanted it. I bought it and used an ICA bag to disguise what it was.
At home, while Mirinda nattered away in a foreign tongue, I made the batter; enough for four waffles. As 1pm clicked over, I was making the first ones. I told Mirinda to wait in the lounge and not peek into the kitchen. She said the smell emanating from it was interesting. There was hopeful expectation in her voice.
And, finally, I presented her with a couple which she declared delicious, different and a delight to pull apart. I enjoyed them as well though I did agree with her that they needed something like crème fraîche or, her suggestion, strawberries.
They certainly made a change from a Chez Gaz salad.
